If it’s rainy and chilly where you are, like it is here today, perhaps that includes curling up on your couch tonight and watching a movie you’ve been meaning to see.
While you’re at it, might I suggest taking your popcorn game to the next level?
Ten times cheaper than a bag of Doritos, and that much healthier too, I vote we bring back popcorn as a go-to snack.
And when I say popcorn, I don’t mean the buttery bags in cellophane, I’m talking about popcorn you pop yourself in an air popper or on the stove-top.
A while back, my friend Katie and I had an old air popper that, I kid you not, was called the Popcorn Pumper (1981 – 2011, may it RIP). We used it so much in our apartment that it’s permanent home was on the kitchen counter. I’m sure we way exceeded our recommended daily corn intake, but it was worth it. And, I regret that we never wrote a popcorn cookbook, because we really perfected some great seasonings and toppings over time, including a brown sugar, maple syrup concoction and some various parmesan cheddar blends.
Below are a few ways to spruce up your popcorn to make it an event unto itself. Trust me, people will start asking you to bring popcorn to parties — which is great for lots of reasons, not least of which is it’s the cheapest snack you could make this exciting.
Basic Stove-Top Popcorn Recipe
2 Tablespoons coconut oil (or any other high-heat oil will work)
1/4 cup popcorn kernels
salt, to taste
Add the coconut oil and kernels to a heavy bottom pan (I usually use a big soup pot, and one that I don’t care about as much in case any kernels burn). Cover.
Keep an eye on it, and when you hear the first sign of popping, shake the pot and coat the kernels with the oil.
Let the cooking continue until the popping slows down to a few seconds between each pop. You’ll know most kernels have popped at this point.
From there, you can dress up your popcorn with any of the ideas below!
***Watch out for late bloomers. Sometimes a kernel will pop after all the others, so just be careful!
